If you’re looking for a chicken recipe that actually earns repeat status, this Dutch oven whole chicken is it. It comes out juicy, tender, and packed with flavor, with that thin, crispy golden skin that’s impossible to resist. The first time I tested it for my family, the entire bird disappeared before I could even think about leftovers, and that’s when I knew it was a keeper (especially alongside easy sides like maple candied Brussels sprouts).
One of the biggest reasons I love using a Dutch oven is how reliably it turns out perfect chicken every single time. Everything cooks evenly, the meat stays juicy, and if you want to keep things simple, you can build the entire meal right in the same pot, which means way less cleanup at the end of the night ( just like in this one pot, dairy-free chicken pasta).

💭Why You'll Love This Recipe
Easy: This roasted chicken is a cook-once-and-eat-twice kind of recipe made with super simple ingredients you already have.
Tasty: The finished chicken results in crispy skin and juicy meat, perfect for a family dinner.
Meal prep: Roasting a whole chicken in a Dutch oven normally means you have leftovers, which make for simple throw-together meals like a grilled vegetable hummus wrap.
Ingredients and Substitutions

You don’t need much for this dinner recipe, really just the whole chicken and a few seasonings! It’s why it’s such a perfect dinner recipe and great for leftover chicken recipes.
- Whole chicken: I opt to use an organic free-range whole chicken because I use the chicken leftovers to make homemade broth. If I’m roasting the chicken and devouring all the juices from it, I prefer that the chicken be free from the basic stuff.
- Garlic: you’ll need both fresh garlic for this oven whole roast chicken and garlic granules. One to season the broth and the chicken from the bottom, and the other to coat the skin.
- Onion: this goes around the base of the chicken to maximize the flavor absorbed.
- Seasoning: The more potent your seasonings, the better the flavor of the roasted chicken or something like smoked chuck roast. I love using Selefina herbs and spices for this exact reason. I use them on leftover chicken recipes, too.
See the recipe card for full information on ingredients and quantities.
Flavor Variations
Spicy: Like a kick of heat on your meat? Add chopped jalapenos to the base or red pepper flakes to the seasonings.
Bright and fresh: Slice fresh lemons and layer them around the chicken for a pop of citrus flavor.
How To Cook A Whole Chicken In The Dutch Oven

Step 1: Place the onion and garlic in the bottom of the Dutch oven.

Step 2: Mix the spice mixture together.

Step 3: Coat the chicken.

Step 4: Put some water in the bottom of the Dutch oven and place the chicken in. Bake at 350 degrees Fahrenheit.
Expert Tips
Confirm that there is nothing in the chicken cavity before you pop the chicken into the oven. The same goes for making something in a slow cooker whole chicken.
Let the roasted chicken in a Dutch oven sit for at least 10 minutes once cooked through. This allows the juices to settle into the meat, making for a better flavor.
You can make a full meal out of this Dutch oven roast chicken by adding potatoes and carrots around the chicken. Make sure not to over-crowd the chicken itself, or it'll lose some of its crispiness.
How To Make Sure The Chicken Skin Is Crispy
For crispier skin, make sure to pat the chicken dry before rubbing on the spice mixture. This helps it better stick to the outer skin.
The first half of roasting the chicken should be covered, and make sure that the chicken is mostly cooked through. However, the last bit is where the skin crisps up!
Make sure to cook the chicken uncovered for the last 30 minutes. This gives the skin time to get rid of the juicy and start to get crispy. And for that full golden brown look, broil the chicken for only 90 seconds before removing it from the oven to sit while you finish making gluten-free sweet potato casserole to go with it.
Serving and Meal Prepping
Serve your Roasted chicken (or these Dutch oven steak recipes) along with side dishes like Bombay Potatoes and a roasted vegetable medley! Similar to 3-2-1 ribs, they make a great family dinner.
That said, the best part about cooking a Dutch oven chicken is the leftover chicken! Use the leftover chicken for:
- A dairy-free chicken casserole.
- Add it into wraps like this quinoa salad wrap or a cranberry walnut chicken salad sandwich.
- Pastas like this 15-minute chicken pesto pasta.
- Make gluten-free chicken soup.
- Serve it heated up on the side of something like air fryer Brussels sprouts.
How To Cook A Whole Dutch Oven Chicken FAQs
When cooking the chicken in an oven set to 350 degrees Fahrenheit, you want to cook the chicken for roughly 20 minutes per pound. This results in a juicy but not overcooked chicken.
Make sure to use a meat thermometer to check the temperature of the roast chicken before serving. The temperature should be higher than 165 degrees Fahrenheit.
Adding a bit of water to the bottom of the Dutch oven helps prevent the drippings from the chicken not burn. Plus, it allows for the flavored moisture to seep back into the chicken, making for a juicier, flavorful chicken. If you want crispy skin, though, make sure to place the water around the chicken, not on top of it.
Place a chicken with the breasts down so that they come out ultra juicy, or with the breasts up so that they come out super crispy.
No, you shouldn't cook a whole chicken from frozen. For best results and safety measures, thaw your chicken in the fridge overnight or in a cool water bath before cooking.
