    Dairy-Free Almond Flour Cookies

    A melt-in-your-mouth dessert you'll make again and again. these dairy-free almond flour cookies are the perfect indulgence. Totally grain-free and eggless, they're an easy cookie to whip up. Just know that it's impossible to eat just one!

    We actually call these "crumble cookies" in our house because they're so delicate but so delicious. The sweetness from the maple syrup and the lightness from the almond flour make them melt in your mouth as soon as they touch your tongue.

    Though they don't have a binder like eggs, they do firm up once they've been in the fridge a bit.

    As a Certified Nutrition Coach, I use these cookies as a weekend indulgence, on top of a cookies and cream shake or to make with the kids because they're just so easy.

    Easy to make: There are only 8 pantry staples you need to whip up the recipe.

    Expert Tips To Make Them

    For them to be dairy-free and paleo, make sure to use Enjoy life chocolate chips.

    Measure the coconut oil before you melt it.

    Do not confuse almond flour with almond meal. Though both can be used in this dairy-free cookies recipe, almond flour will look better and result in less chewy cookies. Learn more about the difference between almond flour and ground almonds.

    These cookies are not formed once they come out of the oven. They need to sit and cool for at least an hour before you remove them off the tray. Even then, they'll be insanely delicate and you'll need a silicone spatula.

    We love them like that, all crumbly. If you want to firm them up, store them in the fridge overnight and they'll harden up from the coconut oil.

    How To Make Them

    1. Warm the honey and coconut oil until melted.
    2. Mix together the dry ingredients (except chocolate chips).
    3. Add in the wet ingredients and mix until combined.
    4. Stir in the chocolate chips lightly.
    5. Use a trigger ice cream scoop to portion the cookies.
    6. Press them down lightly.
    7. Bake at 350F for 10 minutes.
    8. Let cool at least 1 hour on the cookie sheet.

    Varations

    These dairy-free almond flour cookies are perfection as is! However, it is fun to switch it up every so often. Below are a few fun ways to vary the recipe.

    Sprinkles: Top the cookies with themed sprinkles for a special gathering.

    Add crunch: Use a crunchy nut butter or top the cookies with pecans for some extra texture.

    Chocolate: Add 1 tablespoon of cacao powder to the batter for a double chocolate flavor.

    Storing Them

    Let the eggless cookies cool fully (at least one hour!) on the cookie sheet before moving them. Transfer them to an airtight container making sure to separate layers with parchment paper or they'll stick together.

    Store in the fridge for 7-10 days (they'll never last that long!). Enjoy them chilled.

    You can freeze these cookies as well for up to 3 months. However, the texture once thawed is just a bit different.

    FAQs

    Can I use coconut flour in place of almond flour?

    No. Coconut flour and almond flour are not interchangeable as coconut flour absorbs liquid. Learn more about the difference between coconut flour and almond flour.

    Why do my almond flour cookies fall apart?

    This specific almond flour cookie recipe is super delicate as there is nothing binding them. The only way the cookies don't fall apart is if you let them cool fully. Even off of the tray, they will crumble a bit. Once chilled though, they firm up as the coconut oil solidifies.

    Ingredients
      

    • 2 cups almond flour
    • ½ cup coconut oil measured solid
    • 1 teaspoon vanilla extract
    • ⅓ cup almond butter
    • 4 tablespoons maple syrup
    • 1 tbs honey
    • ½ teaspoon baking powder
    • ½ cup enjoy life chocolate chips

    Instructions
     

    • Preheat the oven to 350 degrees.
    • In the microwave or on the stove melt the coconut oil until it's liquid (melt the honey too if needed).
    • In a large bowl combine the almond flour and baking powder.
    • In a smaller bowl, whisk together the coconut oil, honey, almond butter, syrup and vanilla until mostly smooth.
    • Combine the wet and dry ingredients and mix well- until everything is coated.
    • Add in the chocolate chips and stir.
    • On a silicone baking mat or a tray lined with parchment paper, portion the batter into balls using an ice cream scoop.
    • With a fork or spatula, press down lightly to flatten the balls slightly.
    • Bake for 6 minutes, flip the tray and bake for another 3-4 minutes until ever so lightly browned.
    • The cookies won't look completely done, let them cool on the tray for at minimum one hour before moving them to the fridge.
