In a small bowl, whisk together the yogurt honey, and vanilla extract until combined and smooth.
Splitting between two small mason jars, add some blueberries to the bottom of each jar and top them with the dairy-free yogurt mix. It should fill to just under the halfway point of the jar.
Top the yogurt with half the starberries and half the granola.
Add the rest of the yogurt to the jars and finish the parfait with the remaining berries and granola.
Either tighten on the lids and store them in the fridge. or enjoy immediately.

I like it when my yogurt parfaits are layered and pretty. If you don’t have time for this, just add the yogurt, then berries, then granola, and call it a day.Frozen berries will thaw and thin the yogurt mixture a bit. You can use them (and I do), just know that. Give it all a big stir before you enjoy it.How To Add More Protein The dairy-free yogurt parfait only has 15 grams of protein as written (dependent on the type of yogurt and granola though). This is fine when I make it for kids, but I prefer more. To do this, I add 2 tablespoons of collagen powder to the yogurt mixture when I mix it up to bring the amount up to 24 grams per serving.
