Ingredients

  • 6 boneless, skinless chicken thighs
  • 1.5 tbs tapioca starch
  • cup sliced leek
  • 3 cloves garlic smashed
  • 1 tomato chopped
  • 8 cremini mushrooms quartered
  • ½ cup chicken broth
  • 1 teaspoon sea salt
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • ¼ cup salsa

Instructions

  • Combine the chicken thighs and the tapioca powder in a plastic baggie and toss. Set aside.

  • Add all the ingredients into a 7-quart slow cooker and mix lightly.

Recipe uses 6-8 chicken thighs.
The best part about this slow cooker hunters chicken is that you can’t mess it up. You can sub out almost every ingredient for what you have in the fridge.
Chicken breasts even work in place of thighs though the cooking time may vary slightly.
Likewise, though it is done after cooking for 5 hours, it can be cooked on low for longer. This is because chicken thighs give off so much juice that the chicken in the slow cooker doesn’t dry out.
Store cooked, slow cooker hunters chicken in an airtight container in the fridge for 3-4 days. If using the hunters chicken for a salad, do not store it with extra liquid. If you plan to whisk it into something, make sure t store it with the drippings/sauce as well.
