In a small bowl, whisk together the peanut butter and coconut milk until mostly smooth.
Add in all remaining ingredients and mix them them together until sticky. If using Equip protein powder, you'll need to add 1 teaspoon of water here.
Portion the blondie batter in a 8x3 silicone loaf pan and top with chocolate chips (if you want)
Bake in the oven for 25 minutes until mostly done and then let them cool fully on the counter.
