Gluten-Free Protein French Toast

Made with gluten-free bread and soaked in a cinnamon maple blend of eggs and collagen powder, this easy, high protein French toast recipe is a decadent way to kick off the day!

Instructions

  • Grease a large pan and heat it just over medium heat.
  • In a wide bowl, whisk together all the ingredients except for the bread.
  • One by one, dip the bread into the egg mixture coating both sides.
  • Place each piece of bread into the heated pan to cook.
  • Flip the bread when the bottom is golden brown and no wet spots remain.
  • Cook until it’s firm and no damn or egg spots remain.

Notes

The collagen powder doesn’t like to whisk into eggs. So, make sure to whisk it in quickly and press down and break up any remaining chunks of powder.
Top the protein French toast with your favorites like dairy-free butter, maple syrup, and berries.
Though you may be able to use protein powder in place of collage for this french toast, it would have to be whey protein powder as it would absorb best. Vegan protein powder absorbs too much liquid.
Each serving is two full pieces of bread.
