Melt the coconut oil in the microwave or a small pot on low. In a large bowl, combine the dry ingredients. Whisk the honey and cashew butter in with the coconut oil until smooth.
Pour wet into dry and mix until combined. Add in the cranberries.
Use a trigger ice cream scoop to portion the cookies onto a parchment-lined cutting board.
Press the cookies down with a fork and place them in the fridge for one hour to set (or pop them into the freezer).

These lactation cookies can be stored in the fridge or the freezer in airtight containers. They do freeze solid so if stored in the freezer, let thaw before eating.
While in the fridge the cookies do firm up, at room temperature they are slightly sticky.
Any dried fruit will work in place of the cranberries. Likewise, peanut, almond or sunbutter can replace cashew butter.
