  • Melt the coconut oil in the microwave or a small pot on low. In a large bowl, combine the dry ingredients. Whisk the honey and cashew butter in with the coconut oil until smooth.
  • Pour wet into dry and mix until combined. Add in the cranberries.
  • Use a trigger ice cream scoop to portion the cookies onto a parchment-lined cutting board.
  • Press the cookies down with a fork and place them in the fridge for one hour to set (or pop them into the freezer).

Notes

  • Mix until everything is sticky, if the mixture is crumbling, add just a splash (1 teaspoon) of almond milk.
  • These lactation cookies can be stored in the fridge or the freezer in airtight containers. They do freeze solid so if stored in the freezer, let thaw before eating.
  • While in the fridge the cookies do firm up, at room temperature they are slightly sticky.
