In a food processor combine the fresh pineapple, honey, half of the lime juice, and mint together.
Strain the pulp out with a mesh strainer.
Fill two glasses with ice. Divide the juice from the blender into the glasses.
Add in the remaining freshly squeezed lime juice and ginger beer.
Top it with fresh mint and enjoy!

Of course, you can use pineapple juice for the ginger beer mocktail recipe. However, if you do that you may want to omit the honey as the juice will be sweet enough.
You don't need to strain the pineapple juice mixture. Technically, you can add it right into the glass. However, some people don't love "texture" or chunks in their mocktails.
You cannot use ginger ale in place of ginger beer for this recipe. You'll lose the spicy ginger flavor.
