Equipment

  • 1 Large baking tray

Ingredients

  • 0.5 kg sterling silver sirloin marinating steak
  • ½ onion
  • 1 carrot peeled, and slivered
  • 8 mushrooms cut in chunks
  • 2 bell peppers sliced
  • 1 tbs avocado oil
  • 1 tbs chili powder
  • 1.5 tbs garlic powder
  • 2 teaspoon onion powder
  • 1 tbs cumin powder
  • 1 teaspoon salt
  • ½ teaspoon paprika

Instructions

  • Preheat the oven to 400 degrees Fahrenheit.
  • Trim steak and slice thinly. Broil for 6 minutes.
  • Toss the spices into a small ramekin and mix.
  • Sprinkle ¼ seasoning on the steak. Toss the veggies in oil and the remainder of the seasoning.
  • Place the veggies on the tray with the steak and smooth everything out flat.
  • Bake at 400 for 12 minutes (this makes them cooked but crunchy). Turn the oven off and let sit 3-5 minutes.
  • Portion out the steak fajitas mixture into gluten-free tortillas and top with your favorites like lime juice, fresh cilantro, and avocado!

Notes

Broiling the beef makes it so that the sheet pan steak fajitas come together much faster. Don’t skip this step!
It also makes it so that when everything is cooking, the veggies stay slightly crunchy and not overcooked.
Though flank steak can be used, it will end up a bit tougher than top sirloin marinating steak.

If you like your veggies softer, turn the oven off and let them sit in the oven for 5 minutes after cooking.
Use any flour tortillas that fit into your diet. I personally use these gluten-free ones or homemade wraps. However, my kids go with traditional wheat wraps.
