One Skillet Jerk Chicken & Rice

This gluten-free chicken dinner is both creamy and hearty and can be prepped ahead of time for busy nights.

Ingredients You’ll Need

– chicken thighs –  jerk seasoning – cinnamon – salt  – olive oil – onion & garlic – white rice –  red kidney beans  – coconut milk unsweetened – bone broth

1. Brown the chicken in jerk seasoning and remove from the pan to cook the onions and garlic.

How To Make The Jerk Chicken

Add in the beans and broth. Cook so the flavors infuse.

Add in the coconut milk and boil it down. Place the chicken on top and bake in the oven to finish cooking.

Serve the one pot jerk chicken as is or with a side of roasted veggies, tomato salad, or even candied brussels sprouts.
