Healthy Apple Oatmeal

Oatmeal is a classic breakfast staple and this healthy apple oatmeal is even better! It's paleo, decadent and a fueling way to start your day.

  • 1/3 cup Regular Oats gluten free if needed
  • 1 1/4 cup unsweetened almond milk
  • 6 dates chopped
  • 1 tablespoon chia seeds
  • 1/2 tablespoon cinnamon
  • 1 apple peeled and grated
  • 1/4 cup walnuts
  • 2 tablespoons maple syrup


  1. In a small pot combine the oats, chia, almond milk, cinnamon and dates. Heat over medium heat for 6-9 minutes until rolling boil.
  2. Add in the apple and reduce heat and simmer for 1-2 minutes.
  3. Remove from heat and let sit to thicken.
  4. In the meantime toast the walnuts in the oven at 300 for 5-8 minutes or until just turning brown.
  5. Stir in the maple syrup, pour into a bowl and top with toasted walnuts.

Makes one super large or two small servings.
