Maple Pecan Oatmeal Recipe (GF/V)

Easy to make and an indulgent, comforting breakfast! This oatmeal recipes tastes like pecan pie and is a great way to fuel up in the mornings.

  • 1/2 cups oats gluten-free
  • 1 tablespoon chia seeds
  • 1 1/4 cups almond milk unsweetened
  • 3 dates chopped
  • 1/2 tbs vanilla extract
  • 1/4 cup coconut unsweetened, shredded
  • 3 tablespoons maple syrup
  • 1/4 cup pecans chopped
  • Collagen Powder Optional


  • In a small pot combine the oats, chia, almond milk, and dates. Heat over medium heat for 6-9 minutes until rolling boil.
  • Reduce heat and simmer for 1-2 minutes.
  • Remove from heat and let sit to thicken.
  • Stir in the vanilla and maple syrup.
  • In the meantime, toast the coconut and pecans in the oven at 300 for 6-8 minutes or until just turning brown.
  • Pour the oatmeal into the bowl and top with coconut and pecans - enjoy!
