Maple Pecan Oatmeal Recipe (GF/V)
Easy to make and an indulgent, comforting breakfast! This oatmeal recipes tastes like pecan pie and is a great way to fuel up in the mornings.
- 1/2 cups oats gluten-free
- 1 tablespoon chia seeds
- 1 1/4 cups almond milk unsweetened
- 3 dates chopped
- 1/2 tbs vanilla extract
- 1/4 cup coconut unsweetened, shredded
- 3 tablespoons maple syrup
- 1/4 cup pecans chopped
- Collagen Powder Optional
In a small pot combine the oats, chia, almond milk, and dates. Heat over medium heat for 6-9 minutes until rolling boil.
Reduce heat and simmer for 1-2 minutes.
Remove from heat and let sit to thicken.
Stir in the vanilla and maple syrup.
In the meantime, toast the coconut and pecans in the oven at 300 for 6-8 minutes or until just turning brown.
Pour the oatmeal into the bowl and top with coconut and pecans - enjoy!
