Coconut Berry Granola Bowl

This tasty coconut granola bowl makes the perfect breakfast or snack! Filled with immune boosting ingredients it's delicious and makes you feel like you're vacationing poolside.

Ingredients

  • 1 young coconut
  • 1/4 cup strawberries sliced
  • 1/4 cup blueberries
  • 2 tbs walnuts
  • Optional add ins
  • Raw cacao nibs
  • Pumpkin seeds
  • Hemp hearts
  • Chopped almonds

Instructions

  • Using a large kitchen knife, hack the rind of the top of the coconut at a downward angle (watch the video below for an example).
  • Pop the top off the coconut and drain the water into a bowl or jar (to store for later) leaving 1-2 tablespoons in the coconut itself.
  • Using a spoon, scrape off the flesh from the inside of the coconut leaving it in the bowl.
  • Add the berries, walnuts and any other fixings you like to the coconut bowl. Mix well until combined.
