Quick Chicken Pesto Pasta

This pasta is made in under thirty minutes, full of veggies and perfect for a quick weeknight dinner.

  • Pasta Ingredients
  • Fresh basil pesto
  • 2 chicken breasts cooked & chopped
  • 14 button mushrooms sliced
  • Soba noodles for four


  1. Make the pesto. Combine all ingredients into a powerful blender (like a vitamix) and blend until smooth.
  2. Boil water and cook noodles according to package directions. Rinse and drain.
  3. Heat some oil in a pan over medium heat. Toss in the mushrooms and sprinkle with a bit of salt and pepper. Cook for 2-3 minutes until just starting to soften. Add in the chicken to heat. Lower the temperature slightly and add the sauce to the pan only to warm it (2-3 minutes).
  4. Assemble your dish. Place noodles into the bowl and top with pesto sauce. Swirl it around to combine it and top with more parmesan if you'd like.
