Easy, Fluffy, Almond Pancakes (dairy-free)
Light, fluffy, and healthy this almond flour pancakes recipe makes the perfect breakfast! Whip up these almond flour pancakes for an indulgent weekend breakfast or have some on hand for quick mornings.
Servings 9 pancakes
- 2 cups almond meal
- 3/4 cup oat flour
- 1.5 tbs baking powder
- 1 tsp cinnamon
- 2 eggs
- 3/4 cup egg whites
- 1/2 cup unsweetened apple sauce
- 2 tbsp almond milk
Spray a pan with non-stick spray and heat over medium. Combine all ingredients in a large bowl and whisk until mixed.
Pour batter into pan in pancake form pressing down as needed to make them even.
Cook covered for 6-8 minutes or until mostly heated through. Flip and finish cooking until golden brown.
Top with maple syrup and berries!
Tip: Let the edges of the pancakes get nice and golden brown before flipping. It keeps them soft!
