Vegan Carrot Cake Balls

These sugar-free, carrot cake balls make a tasty snack or a healthy dessert option! Real food-based and allergy-friendly they're perfect for kids.

Ingredients

  • 1 banana large
  • 1/8 cup carrot finely grated
  • 1 cup oats gluten free
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1 tsp vanilla extract
  • 1/2 teaspoon almond extract
  • 1 tablespoon molasses
  • 2 tablespoons almond butter
  • 1/3 cup coconut milk powder
  • 1.5 tablespoons almond milk
  • 1/4 cup vegan protein powder optional!
  • 1 tbs Plant-based milk (+1tsp) only use if using protein powder

Instructions

  • In a large bowl, mash the banana with a fork until few lumps remain. Add in the dry ingredients and mix well (add the protein powder if using)

  • Add in the remaining wet ingredients and mix well until everything is combined. Let sit for five minutes.

  • Line a cutting board with parchment paper and use a trigger point ice cream scoop to portion out the mixture into balls. When you scoop, press down into the scoop with a spatula to get them to bind as best as possible. Place the bites onto the parchment paper and put the tray in the fridge.

  • Whisk the icing ingredients in a bowl and spoon into a Ziplock bag with the tip cut off. Remove the balls from the fridge and pipe the icing on.
  • Return to fridge for 1 hour until ready to eat.
