Energy Boosting No Bake Bars -GF/V

This no bake bar recipe is gluten free and vegan but comes with a secret, energy boosting ingredient to keep you full and fueled.
Servings 5 bars


  • 1 cup gluten free oats
  • ½ cup almond meal
  • 2 scoops Matchinga powder
  • 2 scoops vegan protein powder
  • 4 tablespoons nut butter over flowing
  • 3 tablespoons coconut oil measured solid
  • 4 tablespoons maple syrup
  • 2 tablespoons chia seeds
  • 3 tablespoons almond milk
  • 1 teaspoon vanilla extract
  • 3 tablespoons enjoy life chocolate chips


  1. In a small bowl, combine the coconut oil, syrup, nut butter and vanilla. Heat until coconut oil is melted.

  2. In a large bowl, combine the rest of the ingredients except the chocolate chips and almond milk.
  3. Pour the melted liquid over the dry and mix until somewhat combined (it’ll be dry- that’s okay!).
  4. Add in the almond milk and mix until everything is at least coated and then fold in the chocolate chips.
  5. Grab an 8x4 baking pan, line it with parchment paper and spoon the mixture into it. Using another piece of parchment paper, press the mixture firmly into the pan. Make sure it’s even.
  6. Pop in the freezer for thirty minutes, remove to cut the bars and then keep them in the fridge or freezer!
