Berrylicious Breakfast Donuts

Eating a healthy breakfast doesn't have to be time consuming or boring. Make a batch of these healthy donuts and grab one on the way out the door. Filled with real food ingredients, gluten free and filled with berries they're delicious and provide a great fuel hit!

  • in a powerful blender, grind the oats into a flour being sure to leave some oats intact for texture.
  • Preheat the oven to 350 degrees.
  • In a large bowl, combine the oats, chia seeds, baking powder, and coconut flour in a bowl.
  • In a microwave-safe dish, heat the berries and coconut oil until berries are mostly thawed.
  • Use a fork to mash the berries until chunky.
  • Whisk together the stevia, almond butter, and maple syrup.
  • Pour the syrup mixture into the dry mixture and stir.
  • Add in the berry and oil mixture and mix until coated. Finally, add in the egg and whisk until everything is sticky.
  • Let sit on the counter for 6-10 minutes (this allows the chia seeds and coconut flour to absorb the liquid and helps bind).
  • Prepare your donut tray. Portion the mixture into the donut tray and bake for 12 minutes.
  • Rotate the pan and bake for 6-7 more minutes.
  • Remove from the oven and let cool for forty five minutes in the tray before removing.
