Using only five ingredients the flourless peanut butter cookies are topped with jam taking the iconic sandwich and making it into something new.
These gluten-free thumbprint cookies have all the flavor of peanut butter cookies you remember as a kid but none of the processed ingredients. So basically, you can enjoy them without fear that they’ll affect your regular diet.

Combine the wet ingredients in a large bowl and mix well. Add in the dry.

Portion the cookies onto a baking tray and press them down. Then, pop your thumb into each one before baking.

Once cooled, top the thumbprint cookies with peanut butter and jam.
The peanut butter thumbprint cookies won’t seem done when they come out of the oven, this is normal! Let them sit to finish cooking on the baking sheet and then transfer them to a cooling rack. Be gentle.
