These muffins are filled to the brim with healthy ingredients and more seeds than anything. Adapted from a Tosca Reno recipe Baby Bear devours these muffins within minutes.
Between the almonds, chia and flaxseed these “everything good for you” muffins are full of healthy omega three and anti-inflammatory fats! They also contain a good amount of protein and are super moist from the coconut oil. But the best part? They freeze! Make a big batch and freeze them so you always have some on hand.

Ingredients In Nutritious Seed Muffins
1.5 cup oat flour
1.5 cup almond flour
2 cups bran
1 cup ground flax seeds
3/4 cup chia seeds
2 tsp cinnamon
1/2 cup raw maple syrup
2 teaspoons baking soda
2 teaspoons baking powder
1 teaspoon unrefined sea salt
2 whole eggs beaten + ½ cup liquid egg whites
1.5 tablespoon vanilla extract
1 ½ cups almond milk
1/2 cup water
¾ cup coconut oil, melted

How To Make Super Moist Seed Muffins
Combine all dry ingredients in one large bowl and wet ingredients in another. Mix well. Add when to dry and mix till just combined. Batter should be runny.
Fill prepared muffin cups with batter and bake at 425 degrees F for 15 minutes (turning half way through) or until cooked through.
