Strawberry Pineapple Smoothie With Coconut Whip
If a pink smoothie with whip cream doesn’t make you scream YUM then I’m not sure we can be friends 😛 Be it summertime or winter I am always down for a healthy strawberry smoothie (actually, I love all pink smoothies because well, pink!). but this smoothie is particularly awesome because it comes topped with whip cream and still manages to be healthy and nutritious!
Summertime in Canada gets pretty toasty. Actually, as I write this it’s currently 29 degrees (36 with the humidex). This means that anything icy or cool is a major win for a snack (especially these frozen banana bites)
So truth be told.. we make a lot of smoothie. And while my daughter *thankfully* adore green smoothies, it’s nice to switch up the color and rock something pink and fruity instead!
This strawberry pineapple smoothie is perfect or summertime partially because it’s pink and even more so because it comes with a dollop of coconut whip cream. Have you ever tried coconut whip? It’s quite possibly one of my favorite ingredients in life- well, outside of chocolate.
Coconut whip cream is a favorite because it’s easy to make, delicious and actually really healthy for you! The coconut whip is made with just one can of coconut milk- making it creamy, simple and full of healthy fats.
Having a balance of all three types of fats in your diet is essential to improving your health (and delicious) and this smoothie definitely has some healthy fats!
But back to coconut whip cream. The trick to coconut whip is to make sure you purchase a can of full fat coconut milk and leave it to sit upside down in the fridge overnight. Side note: you could always be more like me, aka the crazy person, who always has a can of coconut milk in the back of the fridge “just in case”.
By using the full fat version, the coconut milk will harden overnight and separate from the water. After draining the water all you have to do is blend the coconut cream like you would any other cream to make whip cream!
So you see.. healthy!
The rest of this healthy strawberry pineapple smoothie is simple but delicious. The strawberry pineapple base keeps it sweet and beautifully colored.
This smoothie is protein powder free but contains a lot of healthy fats to prevent too much of a sugar crash.
Actually this smoothie contains flaxseeds which is another of my favorite sources of fats. Flax seeds (like chia seeds) are high in omega six fatty acids and help reduce inflammation, promote brain development and make everything delicious.
One thing to note though is that both coconut milk and flaxseeds when you’re not used to them can have a “loosening” effect on stools (learn more about foods that help you poop here). Once you work them into your daily diet this isn’t an issue but if you’ve never had them before, just stick to one smoothie at a time 😉

Ingredients In The Strawberry Pineapple Smoothie
- 1 cup frozen pineapple
- 3/4 cup strawberries
- 2 tablespoons Flaxmeal
- 2 tablespoons Almond butter
- 2 tablespoons Hemp Hearts
- 1/2 cup almond milk
- 4 ice cubes
- Water as needed

How To Make The Pink Smoothie
In a powerful blender place the berries, flax, almond butter, hemp hearts and almond milk.
Add in the pineapple and ice cubes.
Blend until smooth and creamy.
You may need a tamper to press everything down or extra water to thin the shake.
For the coconut whip cream: open the can and drain the water off the top of the can. Scrape the coconut milk into a bowl and add the vanilla.
Whip the milk until fluffy and whip cream like.
Smoothie makes two servings but you will have extra whip cream.
Note: If you have a sweet tooth add stevia to the coconut whip as you prefer
