Ingredients You’ll Need
Egg whites: you’ll want to use fresh egg whites that have been separated from the yolks as they work the best. Egg whites from the carton don’t fluff up enough for this recipe.
Vegan protein powder: not all protein powders are created equal and thus, the brand you choose will affect the texture and flavor. This protein mousse was made with Naked Nutrition’s Rice Protein Powder which is what helps give this mousse not only its protein intake but also its light, fluffy texture. It's great for this chocolate protein pudding too.
Vanilla extract: the better quality of your vanilla extract the more flavorful it will be in the mousse. That’s why I try my best to use pure vanilla extract and not artificial.
Cacao powder: this gives the mousse its rich chocolate flavor but also a burst of nutrients. Learn more about the difference between cacao powder and cocoa powder and know that by choosing cacao you’re getting more calcium, antioxidants, and flavor.
Mini chocolate chips: to keep this mousse recipe allergy-friendly, I use enjoy life chocolate chips. However, regular chocolate chips should work. With mini chocolate chips you get a bigger bang for your buck so opt for mini.
Full fat coconut milk: this is what replaces the cream from traditional mousse. Make sure to use full fat coconut milk or your mousse will come out thin and more pudding-like.

Important Teaching Tips
Make sure to use full-fat coconut milk. Otherwise, your mousse will be runny.
Do not beat the protein powder into the egg whites as it tends to clump. It works better if it’s added to the heated coconut milk instead. And when adding it, make sure to keep the mixer going.
Whip the egg whites longer than you think. You really want them foaming.
Traditionally, rice protein has a chalkier flavor than pea protein, know that both will work in this recipe.
You can easily make peanut butter chocolate mousse by subbing the cacao powder for powdered peanut butter.
Keep in mind also that vanilla protein powder or chocolate will work for the recipe. Using a chocolate protein will result in a richer flavor.
How To Make Protein Mousse


Step 1: In a small pot, heat the coconut milk, chocolate chips, and vanilla extract over very low heat.
Step 2: In another bowl, beat the egg whites with an electric handheld mixer for two full minutes until they’re foamy.


Step 3: Once the chocolate chips are melted, use the handheld mixer to mix in the chocolate protein powder and cacao powder to the coconut milk mixture.
Step 4: Finally, add in the egg whites while keeping the mixer going.

Step 5: Portion into mini jars or serving cups and let sit in the fridge for 4 hours to firm up before serving.
Which Protein Powder To Use
This high protein chocolate mousse was made with Naked Nutrition Brown Rice protein powder.
This is important because each protein powder (especially pea protein versus rice protein powder) will absorb liquid differently.

Storing It
Protein chocolate mousse needs roughly four hours to set after mixing all the ingredients. During these four hours and afterward, it should be placed in the fridge and covered with plastic wrap.
Once covered, it will last 3-4 days in the fridge. This means it’s a great dessert to prep in advance or the night before.
And though you can top it with whipped cream ahead of time, it tastes best when topped freshly before serving.

Personally, when I serve this protein mousse, I top mine with:

I have three questions for you.
1) Can I use hemp protein powder instead of the brown rice one you use?
2) For the coconut milk: is that the thick part AND the liquid part combined in can OR do we just use the thick part?

Hey Monika! Not sure on hemp protein as I don't use it much, does it absorb liquid like the others? I personally think that it would be okay (worked for me with pea protein too) but flavor may be different. Coconut milk, only use the thick part as it makes it creamier! I used a blended one and it worked but wasn't as awesome. No yolks in the mousse, just the whites! And for some reason fresh egg whites separated works better than a carton of them (wish I a reason for you but I don't lol).
