Maple Balsamic Crockpot Chicken
When you have a house full of crazy (two kids, one dog, two cats plus a hubby that it kind of like a kid) and work three business you pretty much need all the help you can get when it comes to healthy meals ß this is my life folks! Which is why I love crockpot chicken. It keeps dinner time simple (like these awesome fast dinner recipes) while still giving your family fuel and not junk.
There are a lot of tools in the kitchen that I couldn’t live without (you can read about my favorite kitchen tools here!) but I should probably add a slow cooker to that list.
Many people believe that because I work from home I seem to have all this extra time to do household things. These people are horribly mistaken.
Yes, I work out of my home. However, my time is split between training clients (I can hardly be vacuuming and correcting squats at the same time :P), photographing recipes for my own site or for others (I do a lot of recipe creation or just picture re-do’s for other sites) or attempting to catch up on writing, social and the like.
Like I said, hardly a lot of time for making fancy meals 😛
So, crockpot chicken it is!
This maple balsamic dinner is super simple and of course tasty (it has maple syrup in it so it must be right?!).
The main reason I love this recipe is just that I can toss the chicken into the slow cooker and walk away. I also make sure to have cooked rice in the fridge so all I have to do is heat it and green beans are just simple- but any veggie would work!
And thanks to its simplicity and because this recipe is real food based, this maple balsamic crockpot chicken is both gluten free and dairy free!
With only six ingredients you truly cannot eff up this recipe (excellent!). if you’re looking for a kick, my hubby likes to add a few red pepper flakes to his plate but it’s your call ?
Since many of you mamas are running around in happy chaos like myself, this helps keep life sane. This crockpot chicken recipe is uber simple, it’s healthy and it makes it so freaking nice to come home from work (or in my case walk upstairs haha) and have dinner ready to go.
No fuss, nothing fancy, just real food that tastes great and is insanely simple to make.
Plus, if you have leftover chicken it tastes insanely yummy shredded over a salad the next day!
Ingredients In The Crockpot Chicken
- .65kg (ish )chicken breast strips
- 1/8 cup balsamic vinegar
- 3 tablespoons pure maple syrup
- ¼ cup avocado oil
- Green beans for four, trimmed (I do one cup per person!)
- Rice for four, cooked

How To Make Maple Balsamic Chicken
Place the chicken at the bottom of the crockpot
Whisk together the vinegar, oil and syrup.
Pour over the chicken and stir until chicken is coated.
Cook on low for 4-5 hours (though there’s lots of liquid so it can cook for longer).
Prep/trim the beans.
In the last hour of cooking, before eating, place the green beans on top of the chicken, put the lid back in place and let steam.
Hack: the sauce stays very thin. If you prefer something thicker, mix together 1 tablespoon arrowroot powder to 3 tablespoons water and whisk into the sauce with the chicken before placing the beans on top.
Serve over rice.
