Healthy & Homemade Candy Bars With Caramel – Vegan
If it was possible, is there anyone who wouldn’t live off desserts? I love healthy eating but I have, quite literally, the biggest sweet tooth ever! Which means that recipes like healthy fudge and cookies are a regular rotation in my freezer. Which is perfect because they’re healthy. And now, these homemade candy bars have made their way in there too! Not only are they chocolate but they have a caramel drizzle on top- seriously, I’m obsessed.
If there is one thing I love, it’s chocolate. Any, all and most importantly lots of chocolate.
In the back of mind when I started my journey to health I knew that my obsession would have to scale back a bit. I mean, you can’t eat chocolate every day and be healthy!.. or can you.. 😉
The truth is, I have some form of chocolate every single day. Sometimes it’s a full dessert (like this chocolate peanut butter nice cream) and sometimes I’ve just a piece of my absolute favorite dark chocolate. But it’s there, every day.
So how do I do it? How do I balance my chocolate addiction while remaining healthy?
I’ve just learned to make healthy chocolate.
Yup, that’s it! I’ve learned a few tricks and staples to make my own vegan, gluten free chocolate. And with that, comes not only healthy nutrients but a daily dose of my favorite obsession 😀
And these healthy, homemade candy bars are one way to indulge in that obsession.
Contrary to popular belief, it’s actually not as hard as you think to make homemade candy bars. There’s so many different ways to go about it!
My favorite part about these particular chocolate bars is actually that they’re a no bake recipe. I personally aim for recipes that can be whipped up pretty quickly and this is one of them!
These homemade candy bars are sticky, chocolate coated and drizzles with “caramel” sauce. They use of my all time favorite ingredients: cacao. You can read more about the benefits of cacao powder here but know this.. it’s amazing. High in calcium, antioxidants and magnesium cacao powder is the best possible way to make your own chocolate!
When I set out to make homemade candy bars I actually didn’t have much of anything in mind. All I wanted was a recipe that was simple, contained no additional sugars and was based off of real food ingredients.
This recipe hits all of the perks above and more. It’s an extremely light recipe meaning you won’t feel full or sluggish after eating a bunch 😉 That said.. it’s easy to eat a bunch! I kept mine in the freezer and they were devoured (right out of the freezer of course) far too quickly.
They’re easy to make, delicious and vegan- it’s a win all around.
How to Make Homemade Candy Bars
- 2 cups rice puffs
- 1/2 cup almond meal
- 1/2 cup Coconut flour
- 1/4 cup Brown rice syrup
- 4 tablespoons maple syrup
- 2 tablespoons Coconut Oil
- 1 tablespoon Coconut Oil
- 1/4 cup mini enjoy life chocolate chips
- 1/4 cup smooth Almond butter
How To Make Vegan Chocolate Bars
In a large bowl combine the first three ingredients of the base.
Heat to combine the rice syrup, maple syrup and coconut oil.
Pour wet into dry and mix until everything looks sticky.
Line an 8 x 8 pan with parchment paper. Place the mixture into the pan and use a silicone spatula to spread the mixture and smooth until even.
Place in the freezer for thirty minutes.
To make the chocolate topping, heat the coconut oil over low heat on the stove. Whisk in the chocolate chips until combined. OR Make your own chocolate by heating the coconut oil and maple syrup and whisking in the cacao until combined.
Pour the chocolate mixture over the base and use a silicone spatula to smooth it out. Place it back in the freezer.
To make the caramel. Combine all ingredients a bowl and whisk. Scoop the mixture into a small baggie and cut the tip off. Once chocolate is hard (about ten minutes), decorate the bars with the caramel and return to the freezer to set.
When ready to eat, remove from the freezer and let sit 2-4 minutes. Cut into squares or bars.
Makes 9 squares or 8 bars.
