Gluten Free Pancakes – With A Green Twist
By now it’s no secret that I’m a pancake fiend (with these gluten free peanut butter ones being our new favorite). There’s something just so perfect about them in the morning and gluten free pancakes are probably my favorite! But these pancakes take the cake because they have a super awesome, secret ingredient… can you guess what it is?
You may have noticed that many of my recipes, specifically my pancakes are gluten free. You must assume I am a celiac.
However, I’m not.
The reason I consume so many gluten free foods (and oodles of gluten free pancakes) is that I find the ingredients to be more nutrient dense and thus healthier.
Not everyone needs to consume a gluten free diet, and I surely don’t (read more about getting started going GF here) and if you’re eating processed gluten free foods out of a box, it’s most definitely not healthy.
But if you stick to real food choices, many of your food choices end up being gluten free- they’re just naturally full of healthy nutrients!
But as I mentioned, these gluten free pancakes have a twist… a green twist!

This means that you get double the health benefits. All the ones from a solid base of healthy fats and all the perks of adding more greens to your diet 😀
It’s probably not a shocker, that we could all do with a few more greens in our diets. Well, vegetables in general! And this is just one more way to sneak them in (here’s a few other ways to sneak veggies into foods.. especially for kids!).
Now, I adore green smoothies. Seriously, we drink some sort of smoothie each and every day. Buuuttt, there is such a concept of too much of a good thing.
You actually don’t want to be consuming pounds of oxalates each day (a bi-product of consuming raw spinach). And depending on your personal health profile you may have to monitor that. However, cooking the greens tends to remove oxalates and this, these gluten free pancakes are awesome!
This healthy breakfast option is not only green smoothie based but contains a ton of healthy fats too. I’m not a keto diet person but I won’t deny that healthy fats keep you, well, healthy!

These pancakes are almond flour based which is easily one of my favorite flours to use and they also have some coconut milk in them to keep them fluffy and delicious.
And while they do have oats in them (both to keep you full and keep the pancakes together!) if you stick with Bobs Red Mill Gluten Free Oats you’re in the clear.
This is actually my favorite brand ever when it comes to flours, oats and really anything. They’re a quality product and one I keep my cupboards lined with!

Ingredients In The Gluten Free Pancakes
- 1 egg
- 1 cup almond meal
- ½ cup gluten free oats
- 1/3 cup coconut milk
- 1 handful leafy green of choice (spinach, leaf lettuce etc)
- ½ teaspoon baking powder
- ½ teaspoon Cinnamon
- maple syrup for topping of course
- Sunbutter and chia jam for topping

How To Make These Green Style Pancakes
In a large blender, combine all ingredients except the almond meal and maple syrup.
Pour the almond meal and oats into a bowl.
Pour the blender mixture over the almond meal and mix to combine.
Heat a large pan over medium heat. Spray with non-stick if necessary.
Pour the mixture into the pan and divide up into 5 pancakes.
Cover and cook for seven minutes- pancakes should be starting turn brown at edges.
Remove cover, flip the pancakes and cook until cooked through (3-5 more minutes).
Makes 5 pancakes
