Indulge in all the creaminess of double chocolate with this one-minute chocolate protein fluff. Made with vegan protein powder and sweetened with maple syrup, this protein fluff recipes whips up without xantham gum and makes the perfect bedtime snack.

I have an advertisement relationship with the ads in this post. Check out my disclaimer here
Spoon drizzling chocolate syrup onto chocolate protein fluff in a glass dish.

It’s sweet, creamy, and made in just one minute. This protein fluff is the best way to curb your sweet tooth while giving you a healthy protein boost (though this chocolate protein mousse or a single serving protein cookie is pretty great too).

While protein fluff works as a high protein snack any time, as a Certified Nutrition Coach, I’ve personally been using it as a bedtime snack for the last few years (in addition to these healthy, protein-based bedtime snacks).

Not only is it easy to whip up when you’re feeling “munchy” but after-dinner is when the biggest chocolate cravings occur. Making this a “fix-all” protein recipe (just like this healthy chocolate protein pudding!).

    Ingredients

This chocolate protein fluff is different than most in the sense it doesn’t contain instant jello/pudding mix and is made without xanthan gum.

The instant jello mix is often used to keep the recipe low calorie and the xantham to help bind it together.

However, this recipe uses only vegan protein powder to create its fluff. Simple ingredients, delicious results.

Vegan vanilla protein powder: the kind of protein powder you choose will affect the texture and flavor. In order to gain maximum fluffiness, you want to use a protein that's pea-protein based (notes below).

Peanut butter: make sure to use fresh peanut butter. Using the harder stuff at the bottom of the jar won't blend as well.

Almond milk: any dairy-free milk will work. Personally, we use homemade hemp milk because that's what we have on hand.

Maple syrup: if you have a sweeter protein powder you may not need this. In that case, just add an extra bit of milk. However, this is what's used to give a hint of sweetness without being overbearing.

Cacao powder: not only does this give the protein fluff it's chocolate flavor but a wicked nutrient profile too! Learn more about cacao powder and why you want to add it to your diet.

Mini chocolate chips: totally optional but who says no to chocolate chips? These add a bit of texture and sweetness!

How To Make Vegan Protein Fluff From Scratch

    1. In a small bowl, combine the protein powder, cacao powder, peanut butter, syrup and plant-based milk.
    2. Whisk until somewhat smooth
    3. Let sit for 2-3 minutes for the protein powder to really absorb the liquid. Add in chocolate chips.
    4. top with your favorites
Glass bowl with protein powder and cacao being added to it. Bucket of protein behind it and chocolate chips around it
Glass bowl with protein powder in it and maple syrup being poured in. protein powder and chocolate chips around it
Glass bowl with chocolate protein fluff topped with chocolate chips with protein powder tub behind it
Glass bowl with chocolate protein fluff topped with chocolate chips and coconut whip cream with chocolate sauce being poured on it

    What Makes It Fluffy?

Because the recipe is not put into a food processor, you may be wondering what causes it to fluff up. The answer?

    Vegan protein powder!

Vegan protein powder normally contains pea protein which absorbs a lot of liquid.

It’s this kind of protein that makes the snack “fluff” up and creates an almost cloud-like consistency (without a need for xanthan gum!)

There are however a few vegan protein powders, not pea protein-based (like Botanica which is one of my favorites). You can still use it and it will taste great, but know that it doesn’t fluff up as much.

When To Use The Protein Fluff

Protein fluff is an amazing snack if you struggle to get enough protein into your diet (learn how to increase protein intake).

And while this chocolate recipe makes a great snack in general, it makes the best bedtime snack.

The double chocolate flavor helps curb after-dinner cravings and you can top it with any of your favoites to customize it further.

Plus, if you really want to step it up, you can add in a tiny bit of magnesium powder to help induce calm and bring on sleep!

Since protein and fats are the best combo before bed, this is my favorite way to use this recipe.

    Toppings

If you’re watching calories, you’re not going to want too many toppings. Which is okay!

The base protein fluff recipe is delicious all on its own (provided you like the taste of your protein powder!).

However, if you’re using protein fluff to curb cravings, toppings are crucial.

Below are a few ways to create the ultimate protein fluff:

    • Berries
    • 2-minute coconut whip
    • Chocolate ganache
    • Crumbled nuts
    • Toasted coconut
    • Cookie crumbles
chocolate protein fluff topped with coconut whip cream and chocolate sauce in a clear bowl witch chocolate chips on and around it

How Is It Different Than Other Recipes?

Most other fluffs are frozen and have a marshmallow-like consistency.

This fluff doesn’t require processing time and is made in just one minute. Plus, the consistency is more like cloud fluff than marshmallow.

    Can You Store It?

Truthfully, the fluff is best eaten immediately upon making it.

While you can pop it in the fridge for a bit (a couple of hours or overnight) to have a chilling effect, it won't be as fluffy as it is when made.

And within twenty-four hours it does tend to crust up on top.

    So, fresh is best.

    Important Teaching Tips

The type of protein powder you choose will affect both the flavor and the texture of the snack (learn more about how to choose a protein powder).

Top your protein fluff with whichever toppings you enjoy

Keep the recipe nut-free by using Sunbutter in place of nut and homemade hemp milk as a liquid

The protein powder fluffs up the most when using a vegan protein powder that’s pea protein-based.

Glass bowl with chocolate protein fluff drizzled with chocolate powder and topped with whole30 whipped cream with protein powder behind it.

    Which Protein Powder To Choose

The protein powder you choose will make a difference in both the texture and the flavor of the snack.

Each protein powder is flavored uniquely and contains a unique blend of plant-based proteins, all of which affect the recipe.

The base recipe is made with Genuine Health Fermented Protein Powder.

Genuine Health’s Fermented Vegan Protein Powder helps fuel your goals, recover and stay full.

Made with 20 grams of plant-based protein, this vegan protein powder is dairy-free, gluten-free, non-GMO and certified organic. It’s also been voted one of the best-tasting vegan protein powders.

But best of all is that this protein is fermented. This helps break down the “anti-nutrient” in grains, nuts, seeds and legumes that often causes bloating.

This protein powder literally gives you the best of both worlds. Shop the Genuine Health Store on Amazon

Frequently Asked Questions About Protein Fluff

    Can you save protein fluff?

Unfortunately no. protein fluff must be made to be eaten immediately. If placed in the fridge the fluff becomes hard and somewhat crusty.

    Can protein fluff be frozen?

Protein fluff can technically be frozen and then whipped. However, it will lose a lot of its consistency and “lightness”.

    What is protein fluff?

Made from vegan protein powder, nut butter, and plant-based milk. The pea protein in vegan powders absorbs liquid and creates a fluffy texture.

    Is protein fluff healthy?

Yes. Made from a combination of protein and healthy fats, protein fluff without any toppings is a great high protein, low carb snack.

I’m curious as to why no one commented about the fact that there are two different measurements for the almond milk:
      ¼ cup almond milk
      1 tbs almond milk
      Is it 1/4cup PLUS 1Tbs?
That makes sense, now that I’m typing this. If that’s the case, perhaps clarifying that in the recipe would be helpful.
      Thank you for the recipe!

Delicious! I made this as my post workout snack and it was divine. I took a bit of a shortcut and used choc PB2 and a touch more almond milk. Perfect.

This is delish! Luckily, by chance, I had some of that protein powder so I made it after work for a snack. Awesome!

Your recipes are my go-to's for getting protein. I ordered your suggested protein powder to make sure this fluff is made right. I've made this recipe three times now and just wanted to let you know how much I enjoy this for my chocolate fix and dessert fix.

I was looking for something sweet during my diet and this sounds and looks interesting. I had all the ingredients and I made it. It really took just a minute to prepare it and the taste...just what I needed. Thanks a lot x

This vegan double chocolate protein fluff is seriously addictive! It's like indulging in dessert without any of the guilt. The texture is spot-on. It's light and airy, but still feels decadent. I added some toasted coconut on top, and it added a nice crunch.

Love that this recipe uses simple ingredients. The combination of peanut butter and chocolate is unbeatable. It's like a healthier version of a Reese's cup!

Not sure what I did wrong, but mine came out as soup and not fluff. I didn't even use the extra tablespoon of milk. It sat for 5 minutes....still soup!! Any ideas as to why?

What protein powder did you use? only fermented powder absorbs like a crazy person so if it's soupy it's most likely the protein. regular vegan will absorb some but fermented absorbs a ton so that could be it!

My chocolate protein fluff turned out super rich and creamy. I used a chocolate peanut butter protein powder for extra flavor, and it was a game-changer! So delicious and easy to make.

This quick little snack has rescued me so many times when I was craving something and could've easily gone way off track eating some kind of store-bought junk. It satisfies my chocolate craving and all the protein keeps me happy for a long time. I also love the texture contrast with the little chocolate chips!
