Coconut Berry Granola Bowl

Granola bowls are one of the easiest, tastiest options when it comes to breakfast or a simple snack (this is my all time favorite granola). They’re quick to whip up, customizable and utterly delicious! And this particular bowl has an added bonus.. coconut!

This granola berry coconut bowl makes the perfect, healthy breakfast or snack! It's delicious and full of immune boosting ingredients!

This granola berry coconut bowl is filled to the brim with healthy nutrients to start your day. Coconuts themselves (the flesh, juice and oil) are known for being anti-viral, anti-fungal and anti-bacterial. So basically, an immune boost in a shell.

Coconut meat itself is a great source of medium chain triglycerides ( a healthy fat) which helps boost brain development, keep us full and provide fuel. The meat is also rich in vitamin a & e and the water within the coconut is has an ideal electrolyte balance. All in all.. eat your coconuts!

Along with the coconut the rest of the ingredients are tasty, bright and full of health. Starting your day off with berries will get your system revved up and ready to tackle the day. Plus, eating out of a coconut feels awesome. Like you’re on vacation, do it frequently!

While I decided to keep it simple in this recipe, feel free to add in your favorite mixings to make your breakfast bowl perfect for you.

Ingredients In The Granola Berry Coconut Bowl

  • 1 young coconut
  • 1/4 cup strawberries, sliced
  • 1/4 cup blueberries
  • 2 tbs walnuts

Optional add ins

  • Raw cacao nibs
  • Pumpkin seeds
  • Hemp hearts
  • Chopped almonds

  • Large kitchen knife
  • Bamboo cutting board

How To Make The Berry Coconut Breakfast Bowl

Coconuts are an amazing source of nutrients and this granola bowl makes the perfect breakfast or healthy snack.

Using a large kitchen knife, hack the rind of the top of the coconut at a downward angle (watch the video below for an example).

Coconuts are an amazing source of nutrients and this granola bowl makes the perfect breakfast or healthy snack.

Pop the top off the coconut and drain the water into a bowl or jar (to store for later) leaving 1-2 tablespoons in the coconut itself.

Using a spoon, scrape off the flesh from the inside of the coconut leaving it in the bowl.

Add the berries, walnuts and any other fixings you like to the coconut bowl. Mix well until combined.

This tasty coconut granola bowl makes the perfect breakfast or snack! Filled with immune boosting ingredients it's delicious and makes you feel like you're vacationing poolside.

Ingredients

  • 1 young coconut
  • 1/4 cup strawberries sliced

      Haha glad it looks tasty! Coconut is tricky for some as it can be overpowering. That said, you could always just make the bowl, omit the coconut and feel like you’re on vacation 😉

    What I really love about your berry granola bowl is that it’s actually inside of a coconut. So creative of you to use the coconut as the ingredient and the bowl, itself. Plus, I love the delicious coconut meat.

    This looks like a power breakfast from the heavens! Is it a big pain in the rear to cut the coconut though that would be my only concern. I can see myself in the morning, not the sharpest knife in the drawer at that time, trying to cut open a coconut and losing a finger lol 🙂

      Haha my husband I think has a heart attack whenever I try to open them. I on’t find them too bad but I’ve also had a lot of practice. If I were you, I’d make them for snacks first and see how you do before going to it firs thing in the morning. I’ve opened them the night before and left them in the fridge, that works too!
