Granola bowls are one of the easiest, tastiest options when it comes to breakfast or a simple snack (this is my all time favorite granola). They’re quick to whip up, customizable and utterly delicious! And this particular bowl has an added bonus.. coconut! This granola berry coconut bowl is filled to the brim with healthy nutrients to start your day. Coconuts themselves (the flesh, juice and oil) are known for being anti-viral, anti-fungal and anti-bacterial. So basically, an immune boost in a shell. Note: this post contains affiliate links. For more information click here. Coconut meat itself is a great source of medium chain triglycerides ( a healthy fat) which helps boost brain development, keep us full and provide fuel. The meat is also rich in vitamin a & e and the water within the coconut is has an ideal electrolyte balance. All in all.. eat your coconuts! Along with the coconut the rest of the ingredients are tasty, bright and full of health. Starting your day off with berries will get your system revved up and ready to tackle the day. Plus, eating out of a coconut feels awesome. Like you’re on vacation, do it frequently! While I decided to keep it simple in this recipe, feel free to add in your favorite mixings to make your breakfast bowl perfect for you. Optional add ins Using a large kitchen knife, hack the rind of the top of the coconut at a downward angle (watch the video below for an example). Pop the top off the coconut and drain the water into a bowl or jar (to store for later) leaving 1-2 tablespoons in the coconut itself. Using a spoon, scrape off the flesh from the inside of the coconut leaving it in the bowl. Add the berries, walnuts and any other fixings you like to the coconut bowl. Mix well until combined. Enjoy your breakfast bowl and feel like you’re in the tropics! If you’re looking for a tasty, delicious and healthy breakfast bowl this is it! This granola berry coconut bowl will make you feel like you’re on vacation while giving your body the healthy ingredients it needs to keep you fueled. Coconut Berry Granola Bowl

[…] You may know that I am coconut obsessed. Honestly, I put coconut milk, water or chips in everything. I also crack a fresh coconut 1-2x per month (check out this yummy coconut bowl!) […]
I love the combination of granola and fruit! This would be the perfect pre-workout meal to get lots of energy. Yum!
Mmm anything granola is a win! You can literally throw anything into this bowl and it tastes good- thank you coconut!
Your blog looks so good!
I’m getting hungry over here just looking at all the pretty pictures. I don’t really like coconut much but your post is making me want to still try it out.
Love always,
Zineb
Haha glad it looks tasty! Coconut is tricky for some as it can be overpowering. That said, you could always just make the bowl, omit the coconut and feel like you’re on vacation 😉
Wow that looks delicious. The funny thing is that I don’t like coconut but this makes me think I want to try it again. I’m sure my kids would love to eat out a coconut bowl.
Thanks Raeshal! yea kids love this because it’s something different. Really the coconut bowl makes you feel special 😀
What I really love about your berry granola bowl is that it’s actually inside of a coconut. So creative of you to use the coconut as the ingredient and the bowl, itself. Plus, I love the delicious coconut meat.
Thanks! I’m a coconut fiend so it only make sense to use the bowl too! But you’re right, the meat is soo tasty!
This sounds absolutely delicious, and your pics make it look even better! I’m pinning this and I can’t wait to try it someday soon
Thanks bunches Nicole!
OH MY GOODNESS THIS LOOKS AMAZING!
It’s definitely tasty! I adore coconut 😀
sounds delicious with all these pictures . Really amazing 🙂
Thank you!
This looks like a power breakfast from the heavens! Is it a big pain in the rear to cut the coconut though that would be my only concern. I can see myself in the morning, not the sharpest knife in the drawer at that time, trying to cut open a coconut and losing a finger lol 🙂
Cheers, this looks amazing!
Haha my husband I think has a heart attack whenever I try to open them. I on’t find them too bad but I’ve also had a lot of practice. If I were you, I’d make them for snacks first and see how you do before going to it firs thing in the morning. I’ve opened them the night before and left them in the fridge, that works too!
This sounds absolutely incredible. I love anything having to do with coconut! I can’t wait to try this.
xo, Helene
I’m a coconut fiend too! This is a yummy one 🙂
Omg! This looks so delicious! I can taste it just through the pictures. I’m going to try it for breakfast.
Thanks Tina! it’s definitely a yummy one 🙂
