    Chocolate Almond Flour Cookies

    Soft, chewy, and with the perfect amount of sweetness. These chocolate almond flour cookies can be made for any occasion. Sweetened with honey and drizzled with melted chocolate for a crunchy topping but a comforting inside.

    Made with a base of just almond flour and coconut flour, these gluten-free cookies are sweetened with just honey and chocolate chips.

    Plus, they can be customized for just about any occasion.

    As a Certified Nutrition Coach, I don’t recommend eating cookies every day, but I also know that these are ones you won’t want to miss!

    Why You'll Love Them

    Allergy-friendly: these chocolate almond flour cookies are dairy-free, gluten-free, and totally paleo!

    Easy to make: the cookies use up basic pantry staples so you can skip a trip to the store.

    Texture: they have a soft interior with a crunchy outside to make them almost chewy and so delicious.

    Ingredients You’ll Need

    These chocolate cookies let you skip the all-purpose flour and make a gluten-free dessert with healthy fats instead.

    Almond flour: make sure to use blanched almond flour and not almond meal so that you get a better texture (learn more about the difference between almond flour and ground almonds).

    Coconut Flour: a figure competitor's best friend! Coconut flour is low in carbs but high in that satiating feeling you get from eating carbs.

    Cacao powder: though cocoa powder will do in a pinch, cacao is much more nutritionally beneficial. Learn the difference between cacao and cocoa powder.

    Almond butter: use fresh almond butter so that it’s super-runny and mixes well with the other ingredients.

    Honey: these chocolate almond flour cookies are sweetened with just honey and chocolate chips (no processed sugar or even coconut sugar!). If your honey is on the hard side make sure to warm it a bit.

    Egg: any eggs you have on hand will do.

    Baking soda & powder: you need both in order to get the consistency right on these almond flour chocolate cookies.

    Salt: just a pinch is all you need and pink salt or sea salt will work.

    Chocolate chips: I use mini chocolate chips as they distribute more evenly. Make sure to use paleo chocolate chips as you need them.

    Dairy-free milk: we use homemade hemp milk to make gluten-free cookies but almond milk works just as well.

    Avocado oil: this helps with the texture of the cookies so make sure not to sub for coconut oil.

    Important Teaching Tips

    These cookies do expand a bit so make sure to leave room between them on the baking sheet.

    Life is easier when you line the baking tray with parchment paper or a silicone cookie sheet.

    Baking gluten-free can be tricky so read over the best tips for gluten-free baking.

    They come out of the oven super soft and extremely delicate. Let them cool fully on the pan.

    Though the pictures show the chocolate almond flour cookies drizzled with chocolate, it’s not necessary. They’re delicious without it!

    However, if you want to drizzle the cookies just whip up some dairy-free chocolate ganache.

    How To Make Almond Flour Cookies

    Step 1: In a large bowl, combine all the dry ingredients except for the chocolate chips.

    Step 2: Add in the wet ingredients one by one and mix well.

    Step 3: Fold in the chocolate chips.

    Step 4: Use a trigger ice cream scoop to portion out the cookie batter onto a baking sheet.

    Step 5: Bake for 20 minutes and let them cool fully on the pan.

    Step 6: Drizzle them with dairy-free chocolate sauce.

    How To Alter The Cookies For The Occasion

    One of the things I love about these gluten-free cookies is that you can switch them up as per your preference.

    Here’s a few ways I do that:

    For Christmas: swap half the chocolate chips in the mixture for crushed candy canes. Likewise, drizzle the cookies in melted chocolate and then sprinkle more candy canes on top.

    For Valentine’s: keep the chocolate chips in the mixture but top the cookies with pink sprinkles or edible glitter.

    For Easter: keep the almond flour sugar cookie mixture as is but on top of each cookie, bake one mini egg.

    General Add-Ins

    The chocolate almond flour cookies taste delicious with any of the following add-ins:

    • Pecans
    • Shredded coconut
    • Sliced almonds
    • Peppermint extract

    How To Store Them

    The cookies should be stored in an airtight container in the fridge. Like this, they'll stay fresh for up to 5 days. Plus, after being in the fridge, their chewy texture is even better.

    They can be frozen as well but make sure to separate them between sheets of parchment paper so that they don't stick together.

    When you want them, let them thaw in the fridge overnight.

    Is there a trick to baking with almond flour?

    When baking with almond flour know that your baked goods will normally spread out a bit more and take less time to cook. Almond flour leaves baked goods feeling very “light” because it doesn’t absorb liquid like wheat does.

    Why are my almond flour cookies flat?

    Almond flour doesn’t bind ingredients the way that wheat flour does. Instead, it makes them much lighter. This means that they tend to be more delicate and fall apart easier. To avoid this, use a binder in the recipe like gluten-free flour, coconut flour, tapioca starch etc.

    How do I store almond flour cookies?

    Store these cookies in the fridge in an airtight container. They do tend to firm up a bit once chilled. Likewise, they can also be made ahead of time and stored in the freezer until you need them.

    Naturally gluten-free these almond flour cookies are light, soft, and drizzled with melted chocolate. They’re the perfect dessert to whip up in a pinch as they only require common pantry staples.

    • 1 Silicone cookie sheet
    • 1 2oz Trigger ice Cream Scoop

    Ingredients
      

    • 1.5 cups almond flour
    • 2 tbs coconut flour
    • ½ cup almond butter
    • ⅓ cup cacao powder
    • ½ cup honey
    • 1 egg
    • ½ teaspoon baking soda
    • ½ teaspoon baking powder
    • ¼ teaspoon salt
    • ½ cup chocolate chips
    • 4 tbs milk
    • 2 tbs oil

    Instructions
     

    • Preheat the oven to 350 degrees Fahrenheit.
    • In a large bowl, combine all the dry ingredients except for the chocolate chips.
    • Add in the wet ingredients one by one and mix well.
    • Fold in the chocolate chips.
    • Use a trigger ice cream scoop to portion out the cookie batter onto a baking sheet.
    • Press the cookies down slightly as they do expand.
    • Bake for 20 minutes.

        Unfortunately, I haven't tried making them nut free. Almond flour doesn't absorb liquid like traditional flours so you can't swap straight flour. It's a hard one 🙁
