Simple Chicken $ Vegetable Casserole
Do you enjoy simple, one bowl dinners like the Tangy Lemon Noodle Bowl? Well here's another one for you! This one bowl tasty dinner is filled with healthy immune boosting vegetables and proteins. It's sweet, tasty and oh so good for you!
This recipe is adapted from Precision Nutrition. And while tasty, I did want to make a few adaptations!
It’s often the basics that are the tastiest- and the healthiest. And it doesn’t get much more basic than chicken and vegetables!
But this particular recipe is far from basic. It’s creamy, full of flavor and a perfectly complete meal… plus the smell of while you’re cooking is wonderful!
Not only are you getting a rainbow of nutrients form all the colorful veggies but you’re also giving your gut a bit of a boost from the fermented miso-based sauce. Fermented products are perfect digestive track builders and this recipe is just that – perfect.
Serve it over quinoa or rice to really make the meal stretch (I’m dutch remember??)

Ingredients In Sweet Chicken And Veggie Casserole
- 1 tbs miso paste
- 3/4 cup coconut milk
- Coconut oil for greasing
- 1 lb chicken breast, cubed
- 1 cup bell pepper
- 1 cup onion
- 1 tbs garlic, minced
- 1 tbs curry powder
- 1/2 tsp tumeric powder
- 1/2 tsp cumin
- 1 cup peach/nectarine/apple
- 2 cups broccoli, chopped
- 1.5 cups asparagus, chopped
- 1 cup mushrooms, chopped
- Parmesan for topping
- Rice/Quinoa for serving

How To Make One Dish Chicken & Veggie Casserole
Pre-heat oven to 400 degrees. Whisk coconut milk and miso together. Pre-heat pan on medium heat and coat with spray or coconut oil. Add the chicken and saute until brown. While chicken is cooking, chop up the veggies.
Transfer cooked chicken to a large bowl. Add pepper, onion, garlic and spices to pan. Saute until fragrant. Add miso mixture, fruit and remaining vegetables. Cook for two more minutes.
Transfer everything to bowl and mix. Place into greased casserole dish and top with cheese. Bake 25 minutes or until cheese is browned. Serve over rice or quinoa if desired.
