Gluten-Free all purpose flour: not to be confused with baking flour or even bread flour, gluten-free flour absorbs a lot of liquid and gives these blueberry bagels their chewy texture.
Dairy-free yogurt: the yogurt helps the texture of the bagels and keeps them from becoming too dense. Any dairy-free yogurt should work so long as it’s not Greek Yogurt.
Quick yeast: we want to keep these gluten-free bagels as simple as possible so opt for dry yeast (not active dry yeast) to keep the prep quick!
Small blueberries: the smaller the blueberries the more flavor you’ll have as they’ll be distributed better. Tiny, wild blueberries are best. If you have a bag of frozen ones, know that this blueberry protein shake is another great way to use them up!
Honey: you don’t need a lot, just enough to add a hint of comfort. Opt for real honey and not processed.
Egg whites: used to harden the top of the bagel and give them some shine so that they look a little more traditional.

Any non-dairy yogurt will work for the blueberry bagels so long as it is thinner. Greek yogurt will be too thick.
Regular flour (or bread flour) cannot be used in place of gluten-free flour because they don’t absorb the same way and would alter the bagel dough.
Make sure to press all the way through the bagel dough with the teaspoon. Otherwise, your bagel will “grow over”.
What To Top The Blueberry Bagels With
These bagels, like most gluten-free bagels, are delicate so don't go spreading rock hard butter on them! However, we love them with:

How To Store Them
These blueberry bagels are soft but chewy right out of the oven and will last 2-3 days on the counter.
If stored in the fridge they will stay fresh up to 5 days but they do firm up. Let the bagels sit a bit at room temperature before slicing them. Then, heat them up lightly until warmed through.
Not only will they soften up but they're easier to top with something like cream cheese when heated or toasted.
I'd suggest not freezing the gluten-free bagels though as they just don't thaw with quite the same texture.

These bagels haven’t been tested with regular yogurt. However, they should work just fine with yogurt that is 0-2% fat. Though Greek yogurt will boost the protein intake, it is too thick and will alter the texture of the bagels.
These bagels last 2-3 days on the counter in an airtight container. Though they will last up to a week in the fridge, they do tend to get a bit too firm. Make sure to heat them up before eating them as that’s when they taste best.
Fresh blueberries work best for the bagel dough because frozen blueberries will add too much liquid when they cook.

- 1 Large Baking Tray
Ingredients
- 1 cup Gluten-free all purpose flour
- ¾ cup Dairy-free yogurt
- 1.5 teaspoon Quick, dry yeast
- ½ cup Blueberries smaller is better
- 1 tbs Honey
- ½ teaspoon Cinnamon
- 1 tbs Egg whites
Instructions
- Preheat the oven to 400 degrees Fahrenheit.
- In a bowl, combine the yeast, cinnamon, and flour. Mix well.
- Add in the yogurt and honey. Mix until everything is sticky.
- Cover the bowl with plastic wrap and let sit for 14 minutes.
- Remove the plastic wrap and mix in the blueberries, popping some as you go.
- Line a large baking tray with parchment paper. Place some flour on your hands and portion out the mixture into four dough balls on a parchment paper-lined baking sheet.
- Use a spatula and your hands to press the balls into a smaller circle about ½ inch thick and shape them so they’re somewhat smooth.
- Use a teaspoon to make a hole in the bagels by pressing it into the middle and turning.
- Brush the top of the bagels lightly with egg wash.
- Bake for 23 minutes in the oven then broil for just one minute until golden brown.
- Remove and let cool on the pan.
- Serve them warm topped with dairy-free cream cheese or your favorite spread!

GF recipes are always a gamble. This one wasn’t my favorite. Our bagels didn’t really rise and remained pretty mushy. It is an easy recipe though and I like the idea since I miss traditional bagels !

Honestly I don't think they'd hold up in boiling and I've never tried. They're amazing "fresh" bagels but not a traditional bagel in that sense. This just keeps it easy for when you're short on time.
