Recipe Roundup: 9 Healthy Curry Recipes
Curry is stocked full of immune boosting ingredients (garlic, ginger & onion) so it’s a pretty common staple in my house (along with cookies obviously, because well, cookies rock). Actually, my favorite thing about curry isn’t that it`s awesome for you (which it is) but that there are so many healthy curry recipes! We rock curry about once every other week. That said, it doesn’t get boring because there really is a lot of variety.
One of the reasons curry is so perfect is that it contains a hord of health ingredients. Onions, garlic and ginger all have high anti-inflammatory properties and are a good staple for all healthy curry recipes.
Curry also (sometimes) contains the root turmeric. Turmeric is one of my all time favorite roots because it comes with so many benefits from cancer treatment to helping arthritis pain (read more about why turmeric is such an awesome root here)
From sweet to spicy and creamy to chunky, curry is extremely versatile. I personally adore trying to curry dishes and thankfully so does baby bear! So below is a roundup of our favorite healthy curry recipes.
This one comes to us from Graeme Thomas who I used to work with. Not only is the recipe tasty but it’s a great low fat alternative to the traditional cream based ones!
This is one of my own healthy curry recipes and it a summertime favorite! This curry is really sweet thanks to the peaches but still has that creamy texture. It uses a coconut milk base to help with the creaminess and obviously maintains all of the health boosting ingreients I`ve become obsessed with 😉
This recipe has a little bit of everything! I personally love meatballs and this curry is served over spaghetti squash. Not only does this make it unique but it also keeps the recipe itself pretty low carb.
This twenty minute curry is simple, tasty and quick- so perfect for a weeknight dinner! It`s vegetarian based, contains all the basics and most importantly.. it`s quick! If you want a fun #meatlessmonday dinner this is it!
The instant pot is currently the biggest thing in the cooking world and yet I have not jumped onto that particular bandwagon (womp womp). This curry is a bit of a step off the norm being fish based which is why it’s pretty awesome! It’s nice to switch up the mix from the basics and this healthy recipe does just that!
I LOVE (understatement) switching up from traditional curries and rocking a green based one. This curry is a nice switch up (though I’ll admit, I added a few more spices when I made it) and it is so so simple to make (only seven ingredients!). Plus, it’s a whole30 recipe which so many people are looking for.
Yes, you read that right.. almond butter! I love this curry just for that 😀 But also, because the combo of almond butter and coconut milk make this curry nice and creamy.
This recipe comes to us from one of my favorite bloggers: Strength & Sunshine! Not only does this recipe only take ten minutes to whip up (um hello, amazing for any busy mom!) but it`s also gluten free and vegan. Truly, this recipe defines the word winning.
And lastly, an awesome coconut lentil curry with lots of veggies and lots of flavor! This curry dish has all the basics spice wise and is perfect because of just that. I personally love the lentil cauliflower combination and this curry has a hint of spice from the jalapenos so perfect for a cold day when you need some comfort!
