Curry is stocked full of immune boosting ingredients (garlic, ginger & onion) so it’s a pretty common staple in my house (along with cookies obviously, because well, cookies rock). Actually, my favorite thing about curry isn’t that it`s awesome for you (which it is) but that there are so many healthy curry recipes! We rock curry about once every other week. That said, it doesn’t get boring because there really is a lot of variety.
One of the reasons curry is so perfect is that it contains a hord of health ingredients. Onions, garlic and ginger all have high anti-inflammatory properties and are a good staple for all healthy curry recipes.
Curry also (sometimes) contains the root turmeric. Turmeric is one of my all time favorite roots because it comes with so many benefits from cancer treatment to helping arthritis pain (read more about why turmeric is such an awesome root here)

This is one of my own healthy curry recipes and it a summertime favorite! This curry is really sweet thanks to the peaches but still has that creamy texture. It uses a coconut milk base to help with the creaminess and obviously maintains all of the health boosting ingreients I`ve become obsessed with 😉

I personally love the lentil cauliflower combination and this curry has a hint of spice from the jalapenos so perfect for a cold day when you need some comfort!
