Roasted Vegetable Medley
Roasted root veggies are simple, tasty and best of all…customizable! If you’re looking for some healthy meals (click here) or just want a tasty snack these roasted veggies are for you. Tasty, filling and nutritious they’re a perfect asset to any meal.
It’s accurate to say that I’m no stranger to roasted veggies. I love them. All of them. In fact, in my house, we roast vegetables once or twice a week.
Not only are they super tasty and easily customized based on your spice blend but they’re also easy and efficient. Roasting veggies helps me use up all the random veggies left in my fridge at the end of the week.
The other reason I love creating a veggie medley is because they’re a simple way to add color to your meal! The more colors on your tray the more variety of nutrients you are taking in. Thus, more color means more health!

Ingredients For Roasted Root Veggies
- 4 cups chopped veggies of choice (see options below)
- 3 tbs olive oil
- Spices of choice (our favorite as sea salt, garlic powder & paprika though my hubby loves adding in chili powder!)
Tip: You can use any veggie to roast but I like Beets (golden, red or candy cane), carrots (switch up your colors!), parsnips, celery & peppers

How To Make Simple Roasted Vegetables
Pre-heat oven to 400 degrees. Choose your veggies.
Chop veggies into bite sized pieces and place into a large bowl. Drizzle with olive oil tossing to coat.
Sprinkle on your spice blend and continue to toss until all veggies are coasted.. Line a tray with parchment paper and lay veggies out flat. Sprinkle the top with a bit more paprika.
Bake for 13 minutes, flip the veggies and bake for another 8-12 minutes.
Note: Baking time vary slightly based on veggies used and texture preference.
