Cookies (like these paleo ones) are an essential part of life in my opinion- seriously, who doesn't love biting into a cookie?! And these gluten free, cashew pecan cookies are no exception! They're tasty, full of delicious ingredients and best of all.. healthy!
I've been a cookie fiend as long as I can remember. Unfortunately, store bought cookies don't do it for me anymore (do most of them not taste like cardboard? Seriously, it's not worth it). And the ones that come from a bakery normally have more sugar than I enjoy. More sugar means I can't eat about two before getting a tummy ache 🙁

And while there are delicious healthy cookie variations out there, swapping cane sugar for regular means I still don't want to eat them ever day.
And I like to eat cookies almost every day. Yup, it's true.
And that's exactly what you can do with these Cashew Pecan Cookies! Not only do they contain healthy ingredients but they keep you full too!
These cookies are loaded with fiber, healthy fats and just enough savory flavors to make you want more. Outside of the dairy free chocolate chips they contain no processed sugar and I absolutely love them.
Similar to "trail mix cookies" these cashew pecan ones can work as both a snack as well as a treat. Plus, they freeze well. So you can make a big batch and munch on them all the time 😀
Ingredients In The Pecan Cookies
- 1 cup oats
- ½ cup oat flour
- 5 teaspoons baking powder
- 1 teaspoon cinnamon
- ½ cup chopped pecans
- ¼ cup mini chocolate chips (enjoy life are vegan) or chopped dark chocolate
- 1 flax egg (1 tablespoon ground flax mixed into three tablespoons water)
- ½ cup cashew butter
- 2 tablespoons coconut oil (measured solid)
- 1 tablespoon honey
- ⅓ cup pure maple syrup

How To Make These Gluten Free Cookies
If you haven't already, make the flax egg and let sit for 1-2 minutes until it gels together.
Pre heat the oven to 350 degrees.
In a large bowl, combine the first six ingredients (up to and including the chocolate).
In the microwave, heat the cashew butter and coconut oil until oil is melted.
In a small bowl, combine the cashew butter, coconut oil, honey and maple syrup. Mix until smooth. Add in the flax egg.
Mix the wet ingredients into the dry until everything is combined and wet looking.
Line a baking tray with a silicone mat, parchment paper or tin foil.
Use an ice cream scoop to portion out the batter (makes eleven cookies).
Gently press the balls down into cookies.
Bake for 8 minutes and rotate the tray. Bake for another 8-10 minutes until just cooked. If you like your cookies more firm leave them on the hot baking tray to cool. Otherwise, remove from the tray (gently as they haven't firmed up!) and cool on a cutting board.
Makes 11 cookies.

Melissa you make me smile! I actually don't own a microwave either (people look at me like I'm insane). Yes you can heat the cashew butter on the stove but put it at super low heat (like three) and keep an eye on it. It it gets too hot (like a rolling boil) it burns and gets chunky and tastes horrible. SO go slow and be patient!

These look amazing! I know my mom would love everything about this cookie, especially since it's on the healthier side. I'm not a big fan of nuts so I'd have to make mine without the pecans. I've never had cashew butter before. Does it have a really strong nut flavor?

MMmm I could live off nuts haha It does have a decent nut flavor so what about making them with sunflower seed butter instead? It would change the flavor but I think still be delicious!

Hey Tom,
That's a good question because cookies don't last long in my house... I personally freeze my cookies and then take them out as I want them (I've had them for a month in the freezer). But placed in the fridge in a sealed container I would estimate roughly five days 🙂
